Easy Salad

Ingredients

  • For the salad
  • Romaine lettuce
  • Cherry tomato
  • Avocado
  • Purple Onion
  • Cooked brown rice

For the dressing

  • Cucumber
  • Yogurt
  • Parsley
  • Garlic
  • Olive oil

First of all, you have to prepare the brown rice using a measure of rice for two measures of water, a clove of garlic and a pinch of salt. Cook over low heat until the rice is done. Reserve and let cool.

For the dressing, blend natural yogurt with parsley, garlic, olive oil and cucumber. Reserve.

Mix the pieces of romaine lettuce with avocado cubes, red onion, cherry tomatoes and brown rice in a bowl. Serve a portion on a plate and accompany with the yogurt dressing.
